  1. Rinse the mushrooms and pat them dry with paper towels, then slice them thickly.
  2. In a sauté pan, heat a couple of tablespoons of olive oil, when hot add the mushrooms, salt and pepper to taste. Cook until golden brown(5-7min).
  3. Add the onion and cook for a couple more minutes (red onions don't need to be cooked for as long).
  4. Add the thyme, rosemary and garlic. When the garlic is fragrant, add the lemon juice and the wine and let it reduce for a couple more minutes.
  5. Add the parsley and the lemon zest.
  6. Finish with the butter and enjoy it!
