  1. Saute in one stick of margarine or butter: a large onion (chopped), and a large green pepper(chopped).

  3. Mix in large bowl: 2 beaten eggs, 1 can of cream style corn, 1 can of whole kernel sweet corn (with liquid), 1 small jar minced pimento (if you wish), and 1 pkg "Jiffy" corn muffin mix.

  5. Pour corn mixture in prepared pan (13x9 greased), spoon sauted onion and pepper over all. Just before baking cover all with grated cheese.
